What kind of liquor is Koto no Shizuku?

Koto no Shizuku is a sake brewed by “Tsurusho Sake Brewery Co., Ltd." in Fushimi, Kyoto.

Ginjo scent faintly like green apple, and when you put it in your mouth, the mild taste of rice spreads. It has an excellent balance of sweetness and sourness, and is a perfect taste to drink with meals.

The great thing about this sake is not only that it is delicious, but also that the price is kept low even though it is Junmai Daiginjo sake. As a Junmai Daiginjo sake that you can enjoy on a daily basis, it is a sake that everyone is pleased with.

What is Junmai Daiginjo Sake in the first place?

As you may know if you like sake, Junmai Daiginjo Sake is one of the sake with a specific name. It is often regarded as the finest type of sake.

First, We would like to explain about “Junmai" of Junmai Daiginjo. This sake is made from rice, rice jiuqu, and water, but there are also sakes with added alcohol, which correspond to “honjozo-shu / ordinary sake (general sake)". “Junmaishu" refers to sake that is made only of rice, rice jiuqu, and water without the addition of alcohol.

“Daiginjo Sake" means that the rice polishing rate of raw rice is 50% or less. The rice polishing rate is simply a numerical value that indicates how much the rice has been scraped. In other words, Daiginjo sake is made by shaving more than half of the rice.

The reason for shaving rice is that it is possible to produce sake without any unpleasant taste by using the center of the rice. In addition, the scent called “Ginjo scent", which is peculiar to sake, is easy to come out, and it is also a feature that the liquor is finished with a high fragrance.

Daiginjo sake, which uses only the central part of rice luxuriously, is naturally set at a high price and is regarded as a so-called “luxury" sake. Nevertheless, Junmai Daiginjo Sake “Koto no Shizuku", which can be purchased at a reasonable price, is a very rare sake.
