Asahi Shuzo’s best sake “Dassai Shining Beyond" was created to exceed “Dassai Shining 20%". In terms of quality, it is not created as a more complete version of “polishing 20%," but as a different product based on this consideration. This is completely different from the traditional Junmai Daiginjo style.
1. Highly polished rice
The rice polishing ratio is not disclosed, but it is highly polished with a polishing rate of over 23%. The lower the rice polishing ratio, the clearer the flavor of the sake will be. We aim for something beyond polishing and high polishing.

Even if the sake rice known as Yamada Nishiki is grown with great care by excellent farmers, 5 to 10% of the rice will still be of poor quality. Farmers have been forced to part with Yamada Nishiki’s non-standard rice due to the low price. Asahi Sake Brewery is a sake brewery that lives together with its farmers. That’s why we researched sake that can only be made with Togai rice, and this delicious sake was born.
1. Liquor made from Togai rice
Traditionally, in the rice used for sake brewing, the part called shinpaku played an important role in increasing the polishing rate. However, since Shinpaku is brittle, increasing the polishing ratio will reduce the yield. For this reason, foreign rice with little shinpaku was considered unsuitable for sake brewing.
2. Astonishing rice polishing ratio of 8%
“Dassai Toward the Future: Together with Farmers" has achieved an astonishing rice milling rate of 8%. This overturns the conventional wisdom of sake brewing.
